Rosemary Beetroot Salad
Do you get a bit bored of salads? Adding herbs such as rosemary to a beetroot salad gives your food much more than just extra flavours; herbs have been used for thousands of years for their potent healing qualities.
The rosemary in this salad has been used medicinally to improve memory; it can also relieve muscle pain and spasm. Rosemary can stimulate hair growth and support the circulatory and nervous systems. It’s got quite a strong flavour so it’s best not to overdo it.
So I’m really looking forward to this colourful rosemary beetroot salad with my grilled chicken for lunch today.

Rosemary Beetroot Salad
Ingredients
- 1 beetroot
- 1 kumato tomato
- 2 carrots
- 1 green pepper
- 1 red pepper
- 3-4 short sprigs of rosemary about 1 level tbsp of rosemary leaves
- 1 tsp of extra virgin olive oil
- 1 tsp lemon juice
Instructions
- Chop all the veggies finely into roughly the same size. (If you have a Thermomix, just chop everything except the tomato on Speed 4 for a couple of seconds)
- Combine the rosemary, oil and juice to make a dressing
- Just before serving, pour over the dressing.
