Paleo Muesli to start your day

After quite a bit of indulging over the last few days, I thought I best start my next few mornings with a health kick aka my paleo muesli.

Minus the heavy sugar load and artificial additives of many commercial mueslis you can quickly prepare your own high energy, high protein and high essential-fatty acid version.  This is super-easy to put together and tastes fab! Ofcourse if you don’t want to go down the paleo route you can substitute the buckwheat with oats and use other nuts and seeds. Make a batch and keep in the fridge for 2 weeks.

Ingredients:
• 1 cup activated buckwheat
• ½ cup ground chia seeds
• ½  cup sunflower seeds
• 1 cup chopped, raw cashews
• ½ cup pumpkin seeds
• ½ cup desiccated or shredded coconut
• ½ cup of goji berries

Method:
– Combine all ingredients
– Add a nut milk or a couple of tablespoons of A2, cashew nut or coconut yoghurt (if you can tolerate it)

To serve:
Top with mixed berries, passion-fruit or grated/stewed apple and enjoy!
