Mango Chia-seed Pudding

Looking for a quick and easy breakfast that you can prepare the night before and eat on the run?  Then this fresh mango chia-seed pudding will do the trick AND give you a nourishing start to the day.  If you don’t like mango, feel free to replace with your favourite soft fruit such as berries or banana.  In Summer, fresh peaches or nectarines work equally well.

1/4 cup chia seeds (white or black or a mixture)
1 cup coconut milk (or your favourite milk)
2 tbsp. chopped fresh mango
1 tbsp. of honey or rice malt syrup

Combine all ingredients really well to avoid the chia seeds clumping together and then refrigerate for a few hours or overnight.  When it’s firm to the touch then your mango chia-seed pudding is ready to eat.

So versatile you could also add some raw cacao and have it as a yummy snack.
