Guacamole
With an abundance of avocados this season and no need for fancy equipment, there’s no excuses for not making this delicious guacamole dip. Packed full of essential healthy fats and taste, this really is a crowd-pleaser and works well as a side to a bbq, dished up with a summer salad or as a dip with crackers, corn chips or veggie sticks.
Ingredients
- 3 ripe avocados roughly mashed
- 1/2 small red onion finely chopped
- 1 fresh baby red chilli hot, finely chopped
- 1 good handful of coriander leaves – roughly chopped
- 6 red grape tomatoes diced
- 1 lemon
- 1 tbsp extra virgin olive oil
Instructions
- roughly mash the avocados with a fork
- add the finely chopped onion and chilli
- mix in the coriander and diced tomatoes
- squeeze in the lemon juice
- stir in the oil and mix until well combined
Notes
Tips:
• if you want a smoother guacamole, blend everything in a food-mixer to reach your desired consistency
• for a guacamole with more of a kick, up the hot chillis
• make a batch and freeze a couple of portions of guacamole; I’ve found that it freezes much better than halved avocados and lemon juice.
