I love the start of Spring.  Flowers are starting to blossom and my favourite fruits are coming into season.  I just can’t get enough mangoes and cherries!  And to enjoy mangoes for longer you can dehydrate them when they are cheap and plentiful so that you can enjoy them right throughout the year.  Or if you don’t have a dehydrator simply “dry” them in the oven on the lowest possible setting.

Still plenty of time to enjoy blood oranges too.  Add them to a glass of sparkling water to liven up your hydration.

As as treat, enjoy them freshly squeezed as an alternative to your usual juice, which has probably had all of its Vitamin C processed out of it.

Or, and this may become my favourite, substitute for lemons in a lemon delicious dessert.  Mmm!

Other fruits in season include:

– Lady Williams and Sundowner Apples

– Lemons

– Yellow and pink grapefruit

– Mandarins

– Oranges: Seville and Valencia

– Pineapple

– Papaya

– Banana and

– Rhubarb

Spring fruits make it so easy to get your 2 serves a day but it’s best not to exceed that and to make sure that you are having at least 5 serves of veggies.
