Chicken Cacciatore
This hearty chicken dish is so much more than your average casserole! Beautifully tender chicken full of comforting aromatics and Italian flavours – it's way beyond my usual comfort food – simple, delicious, warming, nourishing, and good for the soul! Perfect for a cooler evening dinner.
Ingredients
- 2 chicken marylands
- 2 garlic cloves – finely chopped
- 1-2 tbsp extra virgin olive oil
- 1 tin cherry tomatoes
- 1 green capsicum – chopped
- 8 cherry tomatoes – fresh
- 1 handful mushrooms – chopped
- 1 tsp capers – drained
- 1/2 tsp salt
Instructions
- Lightly brown the chicken in the oil in a pan
- Place the chicken in a casserole dish to one side
- Add the capsicum and garlic to the original pan and quickly saute
- Add the tin tomatoes plus salt, and bring to a simmer.
- Poor the tin tomatoes etc over the chicken marylands, add the capers, mushrooms and fresh cherry tomatoes
- Cook in an air-fryer at 200C for 35/40 minutes (or similar in conventional oven) until the chicken is cooked through.
- To avoid the cherry tomatoes charring you might want to add them 10 minutes before the end of cooking
- Serve with rice, quinoa or a wholegrain pasta with a side serve of veggies.
