Bliss Balls for kids

With back-to-school rapidly approaching, I’m being asked by more and more parents for kid-friendly lunchbox ideas.  So I’m going to start off with a variation of my usual nut bliss balls with a nut-free version, perfect for kids’ lunchboxes.

They’re super easy to make and you don’t need a fancy blender or processor either if you have access to ground seeds.

1 cup of chopped dried dates
1/4 to 1/2 cup of water
1 cup of ground sunflower seeds
1/4 cup desiccated coconut
15g white chia seeds
30g coconut oil
extra desiccated coconut for dusting

Place the dates and water in a small pan over a low heat and stir until a sticky paste forms.

Mix in the ground sunflower seeds, desiccated coconut, chia seeds and coconut oil then allow the mixture to cool.  To speed up the process I often place it in the fridge to firm up a bit.

Then roll about a teaspoon of the mixture into a ball and dust with the extra desiccated coconut.  For little fingers you could always make much smaller balls.

And if you don’t have to worry about nuts then you could easily use almond meal instead of the sunflower seeds.  It’s easy to experiment with different nuts, seeds and dried fruits depending what you have in your pantry.

HEALTH NOTE: Sunflower seeds are high in the antioxidant Vitamin E which is needed to protect our cells from damage, including our brain cells.
